Hearty Meat Soup
This is one of my favorite soup recipes to make during the cold weather. (adapted from I Love My Pilates 2.)

For the beef mixture
- 1 lb lean ground beef
- Taco seasoning
For the soup
- 3-5 cups water
- 1 can of diced tomatoes or a few Roma tomatoes sliced
- 1 onion diced
- 1-2 carrots peeled and diced
- 1 celery stalk sliced
- 1 bell pepper sliced
- 1 sweet potato peeled and chopped
- 1/4 cup ketchup
- 1/3 cup vegetable broth
- 1 tbsp minced garlic
Spices
- 2 tsp salt
- 1 tsp dried crushed basil or TJ’s Green Goddess Seasoning
- 1 cup shredded Mexican melting cheese
- 1 bay leaf (optional)
- Tortilla strips to serve
Prepare the ground beef in a skillet, adding the taco seasoning. Drain the excess oil and let cool while you chop the veggies.
In a pot, add the chopped onions and garlic and cook until translucent.
Now add the rest of the veggies, the ketchup and the spices except for the sweet potato, cooking them until tender.
Add 3-5 cups of water and 1/3 cup of broth. Place the lid on the pan and bring to a boil.
Bring to a simmer with the chopped sweet potatoes, and simmer for 15 minutes, stirring occasionally.
While still warm, stir in the cheese and serve with tortilla strips.
- You can experiment with adding different veggies, depending on what you like.
- Additionally, you can season the beef with any spices you have on hand if you don't have taco seasoning.
