Hearty Meat Soup

This is one of my favorite soup recipes to make during the cold weather. (adapted from I Love My Pilates 2.)

Ingredients
  

For the beef mixture

  • 1 lb lean ground beef
  • Taco seasoning

For the soup

  • 3-5 cups water
  • 1 can of diced tomatoes or a few Roma tomatoes sliced
  • 1 onion diced
  • 1-2 carrots peeled and diced
  • 1 celery stalk sliced
  • 1 bell pepper sliced
  • 1 sweet potato peeled and chopped
  • 1/4 cup ketchup
  • 1/3 cup vegetable broth
  • 1 tbsp minced garlic

Spices

  • 2 tsp salt
  • 1 tsp dried crushed basil or TJ’s Green Goddess Seasoning
  • 1 cup shredded Mexican melting cheese
  • 1 bay leaf (optional)
  • Tortilla strips to serve

Instructions
 

  • Prepare the ground beef in a skillet, adding the taco seasoning. Drain the excess oil and let cool while you chop the veggies.
  • In a pot, add the chopped onions and garlic and cook until translucent.
  • Now add the rest of the veggies, the ketchup and the spices except for the sweet potato, cooking them until tender.
  • Add 3-5 cups of water and 1/3 cup of broth. Place the lid on the pan and bring to a boil.
  • Bring to a simmer with the chopped sweet potatoes, and simmer for 15 minutes, stirring occasionally.
  • While still warm, stir in the cheese and serve with tortilla strips.

Notes

  • You can experiment with adding different veggies, depending on what you like.
  • Additionally, you can season the beef with any spices you have on hand if you don't have taco seasoning.
